Most schools run two sessions a day: a morning class with pickup around 8 to 9 am and an afternoon or evening class with pickup around 3 to 4 pm. Both cook the same menu. What changes is the market, the temperature and which meal you skip.
Here are the pickup times school by school, which evening classes still visit a market, how hot the kitchens get, and how each session fits around the rest of your day in Chiang Mai.
The quick answer
Book the morning if you want the market: Thai Akha Kitchen only visits it on the morning class, and stalls are fullest before 10 am. Book the evening for a cooler kitchen and dinner: Yummy Tasty ($29) picks up at 2:30 to 3 pm, still shops at a market and ends with dinner in town. Smile runs both, at 8 to 8:30 am and 3 to 3:30 pm.

Should you take a morning or an evening cooking class?
Morning for the market and the farm garden in soft light. Evening for cooler air, a sunset dinner and an open morning.
The morning class is the classic: market, garden, cooking, lunch. You eat from about 10 am to early afternoon, so skip breakfast. A family on a morning class in August 2025 noted the "first dish you start eating is by 10am".
The evening class suits anyone who wants the morning for a temple, a lie-in or a trip up Doi Suthep. Kitchens are cooler after 4 pm, and you end with a big dinner. The cost: some evening classes skip the market, and in November to January it is dark before you finish.

What time are pickups for morning and evening classes?
Morning pickups run 8 to 9 am, evening ones 2:30 to 4 pm. The window is 30 minutes; be in the lobby at the start of it.
Times from the Viator listings in November 2026. The driver calls at each hotel in turn, so your time depends on where you sit on the route.

Does the evening class include the market?
It depends on the school. Thai Akha Kitchen’s evening class skips it; Yummy Tasty and Siam Garden still shop at a market in the afternoon.
Thai Akha Kitchen’s listing is clear: the market tour is "only for morning class". A guest in March 2026 put it simply: "I would highly recommend doing the morning class as it includes a trip to the market."
Yummy Tasty’s evening class lists "Visiting and shopping fresh ingredients at the local market", and Siam Garden’s evening listing includes the market and organic garden too. Afternoon markets are quieter than morning ones, with fewer stalls of fresh herbs but plenty to learn. If the market is the point for you, book a morning.

Want an afternoon class that still visits the market? Yummy Tasty picks up at 2:30 pm, shops at the market and ends with dinner, from $29.
Check dates for the Yummy Tasty evening classIs it too hot for a cooking class at midday?
From March to May it can be. April highs in Chiang Mai average around 36°C, and most farm kitchens are open-air.
April is the hottest month, with average highs around 36°C (weather2travel), and you are standing over a gas burner. A Thai Akha Kitchen guest in June 2026 found the kitchen "without air conditioning and oppressively hot". In the cool season, November to February, highs are closer to 28°C and the morning garden walk is the nicest part of the day.
In hot months, pick an evening session or a school with an air-conditioned room. Siam Garden lets you eat in an air-conditioned dining room; a guest in April 2025 called it "A plus on a hot day in Thailand".
Will you see the sunset on an evening class?
From November to February, yes. Sunset in Chiang Mai falls between about 5:45 pm in early December and 7:05 pm in early July.
Those are WeatherSpark’s extremes for the year. An evening class that picks up at 3 to 4 pm is cooking through the golden hour and eating around dusk in the cool season. In June and July you will finish in daylight.
For a farm sunset, Grandma’s Home runs a 3.5-hour Sunset class with a 3:30 to 4 pm pickup and five dishes. A guest in January 2026 called it "a nice break away from the city".

Rather take the morning and the market at a farm? Grandma’s Home runs a 9 am class with market visit, rice fields, hens and mango sticky rice.
Explore the morning class at Grandma's HomeHow long does each session take?
Four to six hours door to door. A morning class has you back by early afternoon, an evening class by 8 to 9 pm.
Smile’s half day runs about six hours, so a morning class returns around 2 pm and an evening class around 9 pm. Yummy Tasty and Grandma’s Home run about four hours. The full day at Smile is eight. Add time if your hotel is last on the drop-off route.
Drop-offs run late as often as pickups. A Grandma’s Home guest in March 2026 waited "~30 minutes after the set time to be picked up". Leave a buffer before anything with a fixed start time.
How do you fit a class around the rest of your day?
Morning class plus an evening street food tour is the best pairing. Never stack an evening class on a busy afternoon.
A morning class leaves the afternoon for a rest (you will need one after six dishes) and the evening open. The evening street food tour starts at 7 pm and covers the northern dishes classes rarely teach, so it pairs well with a morning class on the same day or the next. It clashes with an evening class.
An evening class suits a morning at the temples of the Old City or Doi Suthep. Eat a light lunch. For the full menu by school, see the menu guide; for bringing children, the family guide.

Took a morning class and want the night markets? The street food tour picks up at 7 pm, eight guests at most, with northern dishes no class teaches.
